veggie curry and lentil

You can use other vegetables of the curry family to make this food. Or you can add some chickpeas to it to increase its nutritional value. Besides, children also like this food and can take it with them to school.

 

  

  • 1 onion onion
  • 2 tbsp oil
  • 1 tbsp Madras curry powder
  • 1 tbsp ground cumin
  • 2 sweet potatoe cut them into cubes
  • 1 l veg stock
  • 200 g red lentils
  • 400 g canned cherry tomatoes peel them
  • 200 g green beans
  • 4 tbsp Greek yogurt
  • ¼ cucumber (optional)
  •  small bunch coriander (optional)
  • bread and rice to serve

INSTRUCTIONS

 

  • Warm the oil in a big pan and fry the onion for a couple of mins until the color is gold and it's softened. now you must add the seasonings and let it cook for 1 minute. now you should mix the lentils, sweet potatoes, stock, and cherry tomatoes. 

  • After this mixture boils, you should reduce the flame and let it cook for 20 minutes so the sweet potatoes are soft. Then add the beans and let the mixture cook for another 2 minutes. after this, add the yogurt and some spices. If you wish, you can use coriander and cucumber to decorate it and serve it with bread or rice.
